  • 2 garlic cloves
  • 3 tbs low sodium soy sauce (or liquid aminos)
  • 1/4 tsp cumin
  • 1/4 tsp smoked paprika
  • 1/2-1 tsp Aj√≠¬†Amarillo

Dish

  • 4 large potatoes (sliced like fries)
  • 2 portobello mushrooms (sliced)
  • 1 medium red onion (sliced in wedges)
  • 4 medium tomatoes (sliced in wedges)
  • 2 tbs chopped fresh cilantro
  • Avocado oil
  • Cooked brown rice (if desired)
