Marinade Ingredients
- 2 garlic cloves
- 3 tbs low sodium soy sauce (or liquid aminos)
- 1/4 tsp cumin
- 1/4 tsp smoked paprika
- 1/2-1 tsp Ají Amarillo
Saltado Ingredients
- 4 large potatoes (sliced like fries)
- 2 portobello mushrooms (sliced)
- 1 medium red onion (sliced in wedges)
- 4 medium tomatoes (sliced in wedges)
- 2 tbs chopped fresh cilantro
- Avocado oil
- Cooked brown rice (if desired)
