Make this salad your own - switch up the greens, add protein, add nuts, bring in more herbs - have fun!

Feed Our Soul founder and Executive Chef, Adrienne Wilson, demonstrated how to prepare this delicious watermelon salad recipe for our community members in South LA. Thank you, Adrienne!

Serves 4

SALAD Ingredients

  • 3 cups watermelon, cubed
  • 2 cups of arugula
  • 1/4 cup feta cheese
  • 1/4 cup red onion, thinly sliced
  • 1/2 cup cucumber, thinly sliced
  • 1 handful fresh mint, chopped
  • Sprinkle ground salt & black pepper to taste

 

Balsamic Vinaigrette Ingredients

  • 1/3 cup olive oil
  • 3 Tablespoons balsamic vinegar
  • 1/4 teaspoon garlic powder
  • Black pepper to taste

Recipe Preparation

  1. Mix dressing
  2. Assemble salad
  3. Serve chilled & enjoy
