Serves 4
SALAD Ingredients
- 3 cups watermelon, cubed
- 2 cups of arugula
- 1/4 cup feta cheese
- 1/4 cup red onion, thinly sliced
- 1/2 cup cucumber, thinly sliced
- 1 handful fresh mint, chopped
- Sprinkle ground salt & black pepper to taste
Balsamic Vinaigrette Ingredients
- 1/3 cup olive oil
- 3 Tablespoons balsamic vinegar
- 1/4 teaspoon garlic powder
- Black pepper to taste
Recipe Preparation
- Mix dressing
- Assemble salad
- Serve chilled & enjoy
